Lemon Sole

with Samphire Salsa & Hollandaise Sauce

 

Wow your guests with an effortlessly elegant scallop carpaccio, bursting with fresh flavours, it tastes just like summer.

You can get creative with your salad and try a different mix, we used wildflowers, pea shoots, and radish for an earthy depth, balanced by a vibrant passion fruit dressing and a zesty green salsa!

For the salt cure

For the passion fruit dressing

For the salad ingredients (you can change this up!)

METHOD

1. Make the Passion Fruit Dressing

Halve the passion fruit and scoop the seeds into a small saucepan. Add the remaining dressing ingredients and bring to the boil. Once boiling, reduce to a simmer and allow it to thicken slightly. Remove from the heat, let it cool, then transfer to a sauce bottle for easy drizzling later.

2. Prepare the Scallops

Carefully remove the coral from the scallops using a sharp knife.

3. Make the Salt Cure

Combine all the cure ingredients in a bowl, ensuring the scallops are fully coated in the dry mixture. Handle them gently, as the flesh is delicate. Place in the fridge for 10 minutes to cure (if using particularly large scallops, leave them for an extra 5 minutes).

4. Prepare the Salsa & Salad

While the scallops are curing, blitz or finely chop the salsa ingredients and season to taste. 

5. Assemble the Dish

Once cured, remove the scallops from the fridge and slice them thinly. Arrange them on a serving plate alongside your chosen salad ingredients—pea shoots, sliced radishes, edible flowers, and physalis (see our gallery below for inspiration, but feel free to get creative!).

6. Finishing Touches

Drizzle over the passion fruit dressing, add small dollops of salsa, and serve immediately. Enjoy!
